Low calorie/Diabetic cookie cakes:o) Ingredients:
2 1/4 cups flour |
1 teaspoon baking soda |
1 teaspoon salt |
3/4 cup unsweetened applesauce |
2 egg whites |
1/2 cup splenda sugar substitute |
1/4 cup sugar |
1/2 cup splenda brown sugar blend |
1 medium banana, mushed |
1 teaspoon vanilla |
1 1/4 cups chocolate chips (i use a combination of white chocolate chips,semi-sweet chocolate chips, and hershey's special dark ) |
4 marshmallows, shredded |
Directions:
1. Preheat oven to 350°F. 2. Stir flour, salt and baking soda in a bowl, set aside. 3. Beat applesauce, egg whites, and sugars with a mixer. 4. Mix in mushed banana and vanilla. 5. Slowly add flour mixture to mixer. 6. Add chocolate chips. 7. Drop by spoonfuls onto cookie sheet (I made 3 dozen small). 8. Bake for 15 minutes. |
