The cake recipe is adapted from one in the 1969 Betty Crocker cookbook, the frosting is from an old church cookbook. Ingredients:
1 2/3 cups sugar |
2/3 cup unsalted butter, softened |
3 eggs |
2/3 cup buttermilk |
2 1/8 cup flour( all white, or 1/2 and 1/2 whole wheat) |
1 1/4 teaspoon baking powder |
1 1/4 teaspoon baking soda |
1 teaspoon salt |
1 1/4 cup ripe mashed bananas |
2/3 cup finely chopped nuts |
cream cheese frosting |
1 8 oz. package cream cheese |
1/2 cup (1 stick) unsalted butter, softened |
2 1/2 to 3 cups powdered sugar |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350 degrees. 2. If using a mixer, place the sugar, butter, eggs, buttermilk, flour,baking powder, baking soda, salt, banana, and nuts in a mixer bowl, and mix for 1/2 minute on low, scraping sides of bowl constantly. Then mix on high for an additional 3 minutes, scraping sides occasionally. 3. Grease and flour a 9x13 cake pan, or 2 9 inch round cake pans. Bake for 45 to 50 minutes in 9x13 pan. Bake 35-40 in round pans, or until a toothpick inserted into the center comes out clean. Cool. 4. To prepare frosting: in a medium bowl, cream the cream cheese, butter, and powdered sugar together. Stir in the vanilla. Frost cooled cake. |
