Had some bananas that were getting old and didn't wanit to make just a banana bread, so starting lookup cake receipes and made up my own Ingredients:
1/2 pound sweet butter (2 sticks) softened |
1 cup granulated sugar |
2 eggs |
3-4 ripes bananas mashed |
2 cups flour |
1/2 tsp salt |
1 tsp baking soda |
2 tsp baking powder |
1/2 cup buttermilk (tbsp buttermilk and balance to 1/2 cup mix southern comfort or bourban) |
1-1/2 tsp vanilla |
1 tsp cinnamon |
1tsp allspice |
1/2 tsp giner |
1 cup chopped nuts (i used walnuts) |
1-1/2 cup raisins |
Directions:
1. Preheat oven to 350 2. Grease & flour 2 9 layer pans (I also lined bottom with parchment paper) 3. Cream butter and sugar together till fluffy 4. Add eggs one at a time, beating well after each addition 5. Add mashed bananas, mixing thoroughly 6. Sift dry ingredients together and then stir into butter/egg mixture alternating with milk mixture 7. Add vanilla and mix for 1 minute 8. Add nuts and raisins to incorporate 9. Pour into prepared pan and bake at 350 for 20-30 minutes or until cake tester comes out clean from center of pans 10. Cool in pans on rack for 10 minutes 11. Unmold and cool for 2 hours 12.
