Got it frm Ahmad but less calories .... Ingredients:
350 grams self raising flour |
1 tsp bicarbonate of soda |
2 tsp ginger and nutmeg |
150 grams brown sugar |
4 eggs |
1 cup olive oil |
1 banana, mashed with fork |
4 slices pineapple, very finely chopped |
finely grated rind of 1/2 orange |
and juice of 1 orange |
50 gms almonds chopped. |
frosting |
150 g light soft cheese |
50 g olive margarine |
100 g icing sugar. |
3 medium bananas. |
2 tbsp caster sugar. |
Directions:
1. Preheat oven to 180 deg 2. .Butter and line a square cake pan 3. Sift flour in with the soda, spices and sugar. 4. Whisk the eggs and the oil until smooth. 5. Stir the egg mixture in the flour mixture 6. add the banans, pineapple, orange rind and juice and walnuts; stir well. 7. Bake 50 minutes, 8. remove from pans and cool. 9. Cut 2 bananas into thin slices. 10. Boli them with icing sugar 11. cool them in aluminium foil 12. Beat the soft cheese and margarine till smooth 13. add the icing sugar 14. Cut the cake into half 15. Spread half of the frosting over and spread half of tha bananas 16. Put the other half cake on top of it and spread the remaining frosting 17. arrange the remaining banana slices on top |
