These are definitely cupcakes; pleasantly sweet, moist, light and fluffy little cakes with a perfect rise - NOT banana bread or muffins. Easy and fun to make, they smell great while baking and taste fantastic! Iced with a cream-cheese or vanilla frosting, simply divine. Ingredients:
1/2 cup shortening |
1 cup brown sugar |
2 eggs |
1 heaping teaspoon vanilla extract |
4 large over-ripe bananas, mashed (roughly 2 cups) |
1 tbsp. buttermilk powder |
2 cups all-purpose flour |
1 teaspoon baking powder |
3/4 teaspoon baking soda |
1/2 teaspoon salt |
Directions:
1. In a large mixing bowl, cream shortening and sugar. Add the eggs, vanilla, bananas and buttermilk powder. Combine the flour, baking powder, baking soda and salt; add to banana mixture. Fill 18 paper-lined muffin cups two-thirds full. 2. Bake at 350 degrees F for 15-20 minutes or until a toothpick comes out clean. Remove to wire racks to cool completely. |
