My son has a 16 year old appetite and a 4 year old palate. Like most teenagers, he doesn't have time for a good breakfast in the morning. Two of these hearty muffins plus a bottled smoothie are great on the run to school and hold him until lunch time. Add 1/2 cup chocolate chips for a special treat. But no raisins. Because they are evil, you know :) Ingredients:
1/2 cup canola oil |
1/2 cup white sugar |
2 eggs |
3 medium bananas, very ripe |
1 1/2 cups unbleached flour |
1/2 cup old-fashioned oatmeal |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 teaspoon apple pie spice (or plain cinnamon, or any combination of spices that you like.) |
2 tablespoons flax seed meal (optional, adds flavor, fiber and omega oils) |
1/2 cup walnuts, chopped (or pecans or sunflower seeds) |
Directions:
1. Preheat the oven to 400°F. 2. Grease well one 12-cup muffin tin. 3. Blend vegetable oil, sugar and eggs. Add dry ingredients and mix until just blended. Fold in mashed bananas, then nuts. 4. Bake for 20-25 minutes or until a knife comes out clean. |
