Banana Bread, Witchywoman Style |

I love banana bread, but all of the recipes that I've tried just seem so.....bland! Here is my creation and it is super moist and almost cake-like. See my blog at Ingredients:
2 eggs |
1/3 cup buttermilk |
1/2 cup canola oil |
1 teaspoon rum extract |
3 very ripe bananas |
1 1/2 cups firmly packed dark brown sugar |
1 3/4 cup all purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 teaspoon ground ginger |
1/2 teaspoon nutmeg |
Directions:
1. Preheat oven to 350 degrees. Spray 4 mini loaf pans with non-stick cooking spray. 2. Blend eggs, buttermilk, oil and bananas together until smooth. Blend in brown sugar and rum extract. 3. Sift flour, baking soda, salt, cinnamon, ginger and nutmeg together in a small bowl. Add to creamed banana mixture. Stir until just combined. 4. Pour into prepared mini loaf pans and bake 35-40 minutes or until a toothpick inserted in the center comes out clean. 5. Cool in pans for 5 minutes, remove and cool completely on a wire rack. |
