Another recent favorite of mine, I like to make the batter ahead of time and then make the waffles in the morning. Great with additional bananas and pecans on top and syrup! I firsdt found this recipe here thehungryhousewife. Ingredients:
1 3/4 cups flour |
2 tsp baking powder |
1 1/2 tbsp sugar |
1/2 tsp salt |
1/4 tsp baking soda |
1 tbsp cinnamon |
1 pinch of freshly grated nutmeg |
3 eggs |
2 sticks butter, melted |
1 1/2 cups buttermilk |
1/2 tbsp vanilla |
3 ripe bananas, chopped |
1/2 cup pecans, toasted and chopped |
Directions:
1. In a large bowl whisk first 7 ingredients together. 2. In a small bowl mix eggs, butter, buttermilk and vanilla. Add in bananas 3. Add the wet ingredients into the dry ingredients and stir. 4. Fold in the pecans. 5. Pour into waffle maker, makes about 15 4 in. waffles |
