Delicious with hot cocoa or tea for an afternoon snack. Ingredients:
1/3 cup vegetable oil |
1 1/2 cups mashed bananas |
1/2 teaspoon vanilla extract |
3 eggs |
2 1/3 cups baking mix |
1 cup white sugar |
1/2 cup chopped walnuts |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Generously grease the bottom of a 9 x 5 inch loaf pan. 2. Measure oil, bananas, vanilla, eggs, baking mix, sugar, and nuts into a large bowl. Beat vigorously with a spoon for about 30 seconds. Pour the batter into the prepared pan. 3. Bake until a wooden pick inserted in center comes out clean, about 55 to 65 minutes. Cool for 5 minutes in the pan. Loosen sides of loaf from the pan. Remove to a wire rack to cool completely. |
