11/4 cups milk |

1/2 teaspoon nutmeg |
1 teaspoon vanilla |
1/2 teaspoon ground ginger |
2 bananas-sliced |
1/2 cup walnuts-chopped |

3 tablespoon butter |
3 bananas-sliced on a slight horizontal |
1/8 cup brown sugar |
1/8 cup white sugar |
1/2 teaspoon nutmeg |
Directions:
1. Directions: 2. Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour in bowl with salt, spices, sugar and baking powder. Combine egg yolks, butter, vanilla, and milk. Quickly mix ingredients together-batter will be lumpy. Whip egg whites and gently fold into mixture. Gently fold in bananas, walnuts (reserve 1 tablespoon of nuts for garnish). Ladle onto griddle pan on low-medium heat. Cook until bottom is golden brown. Flip, repeat. Top with nuts and caramelized bananas. For a special treat, try serving with warmed applesauce. 3. Caramelized Bananas: 4. Melt butter in non-stick saucepan over medium heat. Add sugars and heat until they dissolve. Add bananas and sauté until mixture thickens and bananas start to brown.
