I love eating oatmeal in the morning - it's cheap, filling, and tasty. However, I got a little bit sick of the usual raisins and apples variety. I came up with this oatmeal after reading about overnight Oatmeal in the Student's Vegetarian Cookbook , and it tastes just like banana bread. Ingredients:
1/3 cup quick oats |
1/2 cup soymilk (vanilla soy milk is the best!) or 1/2 cup dairy milk (vanilla soy milk is the best!) |
1/2 medium banana, sliced |
1 teaspoon packed brown sugar |
1 teaspoon chopped walnuts (optional) |
Directions:
1. Combine all ingredients and stir well, mashing up banana if desired. 2. Chill overnight or heat in microwave for about 1 minute. 3. Stir well. 4. If chilling overnight, eat cold. 5. Otherwise, eat immediately! |
