This recipe was a hit with my family. The muffins will bread-like rather than caky, we eat them for breakfast with butter or cream cheese. Ingredients:
1/4 cup butter |
3/4 cup brown sugar |
1/4 cup applesauce |
1/4 cup plain yogurt (or buttermilk) |
2 eggs |
5 mashed bananas |
1 cup unbleached all-purpose flour |
1 cup whole wheat flour |
1/2 cup quick-cooking oatmeal |
1 teaspoon baking soda |
1 teaspoon baking powder |
1 cup walnuts |
1/2 cup chocolate chips |
Directions:
1. Preheat oven to 350°F. 2. Cream the butter with sugar. 3. Add applesauce, eggs, yoghurt, and mashed bananas. 4. Add other ingredients and mix well. 5. Put about 1 Tbsp of dough into each muffin mold. 6. Bake for 30 minutes. |
