My personal low fat, low calorie recipe for banana bread. This can make either 1 load pan or 12-18 muffins. Nutrition Facts are based on 18 muffins. For a really great twist on this recipe, add 1 cup of Artisan Coffee Roasters Butter Toffee Sugar Free Syrup. Ingredients:
1/2 cup applesauce - canned, unsweetened, without added ascorbic acid |
1/4 cup cinnamon, ground |
1/4 cup egg beaters |
1/2 tsp baking powder |
1 tsp baking soda |
4 small bananas |
1 1/2 cups wheat flour, white, all-purpose, enriched, bleached |
1 tsp vanilla extract, imitation, alcohol |
1/2 cup splenda |
Directions:
1. Mash very ripe bananas in bowl. 2. All all other remaining ingredients and mix well. 3. Pour into well greased 18 muffin pan (for small muffins) 12 for larger ones (the 69 calorie is for the small muffins). 4. Cooking at 350 degrees for about 15 - 20 minutes. 5. Muffins are done when you can insert a toothpick in the center and it comes out clean |
