Ingredients:
1/2 cup all-purpose flour |
1/4 teaspoon baking powder |
1/4 teaspoon baking soda |
dash of salt |
3 tablespoons sugar |
1/4 cup low-fat sour cream |
1/4 cup mashed ripe banana |
1 teaspoon vegetable oil |
1/4 teaspoon vanilla extract |
1 egg white, lightly beaten |
vegetable cooking spray |
Directions:
1. Combine first 5 ingredients in a medium bowl; make a well in center of mixture. Combine sour cream and next 4 ingredients; add to dry ingredients, stirring just until dry ingredients are moistened. 2. Spoon batter into a 6- x 3- x 2-inch loafpan coated with cooking spray. Bake at 350° for 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Let cool in pan 10 minutes; remove from pan, and let cool on a wire rack. |
