This recipe is my favorite! You can add 1/4 c. of chopped nuts, but I prefer my bread without. Note: I think it tastes better if you cook it in the evening and wrap it, then eat the next day. It will keep for about a week. Ingredients:
1-3/4 c. all-purpose flour |
2/3 c. sugar |
2 tsp baking powder |
1/2 tsp baking soda |
1/4 tsp salt |
2-3 med. bananas that are browning |
1/3 c. butter or shortening |
2 tbsp milk |
2 eggs |
Directions:
1. In a large mixing bowl, combine 1 cup of the flour, sugar, baking powder, baking soda & salt. Add mashed banana, butter & milk. Beat on low til blended, then on high 2 min. Add eggs and remaining flour, beat til blended. 2. Pour into a greased 8 x4 x2 loaf pan. Bake at 350 for 55-60 min or til toothpick inserted near the center comes out clean. Cool 10 min on wire rack. Remove and cool completely. Wrap and store overnight before slicing. |
