11/2 cups plain (all-purpose) flour |
1 t baking powder |
1 t bicarbonate of soda |
1/4 t salt |
1 egg, beaten |
125 g butter, softened |
1 cup sugar |
2 large very ripe bananas |
1/2 cup buttermilk |
icing (confectioners) sugar, to serve |
Directions:
1. Preheat the oven to 170 degrees C. Grease a 23 x 12 cm loaf tin and line the base and sides with baking paper. Sift together the flour, baking powder, bicarbonate of soda and salt. In a separate bowl use an electric mixer to beat the butter and sugar for 3-4 minutes or until pale and fluffy. Gradually add the beaten eggs, mixing well after each addition. Mash the bananas with a fork and add to the butter mixture. Stir well to combine. Add the combined dried ingredients alternately with the buttermilk, beating well after each addition. Spoon the mixture into the prepared loaf tin and bake for 55 – 60 minutes or until the top of the bread is firm and is a deep brown colour. A skewer inserted into the centre should come out clean. Allow to cool in the tin for 10 minutes before turning out onto a wire rack. Serve dusted with icing sugar. |
