This bread is very moist and yummy!!
Ingredients:
nonstick cooking spray
all-purpose flour 1 1/2 cups
baking powder 1 1/4 tsp
baking soda 1/2 tsp
ground cinnamon 1/2 tsp
salt 1/8 tsp
2 slightly beaten egg whites
mashed banana 1 cup ( about 3 medium bananas)
sugar 3/4 cup
cooking oil 1/4 cup
Directions:
1. Lightly coat an 8x4x2 loaf pan with cooking spray; set aside.
2. In a medium bowl combine flour, baking powder, baking soda, cinnamon, and salt. Set aside
3. In a large bowl, stir together the egg whites, banana, sugar and oil.
4. Add flour mixture all at once to banana mixutre.
5. Stir just until moistened ( the batter will be lumpy).
6. Spoon batter into prepared pan.
7. Bake in a 350 degree oven for 45-50 minutes or until toothpick comes out clean.
8. Cool in pan on a wire rack for 10 minutes. Remove from the pan and cool completely on rack.
