My mom's recipe. :) With a few additions. PS: The applesauce?? Is for extra moisture!
Ingredients:
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup butter
3/4 cup brown sugar
2 eggs beaten
2 cups mashed overripe bananas (about 4 large)
1/2 cup applesauce
optional: to taste, add cinnamon, vanilla, and nutmeg (i never add a specific amount!)
Directions:
1. Preheat oven to 350 degrees
2. Lightly grease a loaf pan
3. In a large bowl, combine flour, baking soda, and salt.
4. In a seperate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas.
5. Stir the flour mixture into the banana mixture.
6. Pour batter into the prepared loaf pan.
7. Bake for 60 minutes. Cool for 10 minutes, then turn onto a wire rack to cool completely.
