This is really good banana bread. It can also be made as muffins, my kids love them. I usually always add nuts and chocolate chips, unless I am out of them, but it is just as good without them. Ingredients:
2 eggs |
1 3/4 cups flour |
2 tsp. baking powder |
1/4 tsp. baking soda |
1/2 tsp. salt |
1/3 cup veg. oil |
2/3 cup sugar |
1 cup mashed banana (about 3 bananas) |
chocolate chips or nuts, (optional) |
Directions:
1. preheat oven to 350 degrees. 2. In a small bowl, beat eggs. 3. In a medium bowl, sift flour, baking powder, baking soda, and salt. 4. In a large bowl, add veg. oil, then add sugar, a little at a time, beating until fluffy. 5. Add beaten eggs to large bowl, and beat well. 6. Alternately add flour mixture and bananas to large bowl, beating well until everything is mixed in. 7. Pour mixture into bread pan greased with non stick cooking spray. 8. Bake approximately 1 hour, depending on your oven. 9. If you choose to make muffins instead, pour mixture in greased muffin tins, or lined with muffin papers, and bake approx. 25 minutes, at same temp. I always check them at 25 minutes, as I have made them at mom's house, as well as at my oldest daughters place, and neither of their ovens cooked it in same amount of time as mine, one took longer, one took less time, so it's probably a good idea to check them. |
