This is from my Quick/Sweet Breads collection. This is one of Aunt Dawn's. Ingredients:
1 1/3 cup sifted flour |
2 tsp baking powder |
1/2 tsp baking soda |
1/3 cup vegtable shortening |
3/4 cup sugar |
2 eggs |
3 ripe bananas mashed (1 1/3 cups) |
Directions:
1. Sift flour, baking powder, and baking soda onto wax paper. Grease and flour a 9x5x3 inch pan. Preheat oven to 350 degrees. 2. Beat shortening, sugar and eggs in a large bowl with electric mixer until light and fluffy. Stir in bananas. 3. Stir in four mixture into banana mixture, blending only until all ingredients are moistened. Pour into prepared pan. 4. Bake in preheated moderate oven for 50 miuntes or until wooden pick incerted in center comes out clean. Cool in pan on wire rack 10 minutes. Turn out and cool completely |
