I had 4 almost black bananas in my fruit basket and tried this recipe last night. I like it because it's such an easy recipe to remember. The whole loaf is already gone! Ingredients:
3-4 very ripe bananas |
1 egg |
1 t baking soda |
1 c sugar |
1 1/2 c plain flour |
1/4 c melted butter |
1 t salt |
(optional: dried berries, nuts, raisins as you like) |
Directions:
1. Preheat oven to 325 2. Grease loaf pan 3. Mash bananas in a bowl 4. Add all other ingredients, mix well. 5. Mix in optional ingredients (I just dropped the nuts in by handfuls, no measuring) 6. Bake 1 hour. 7. Cool before cutting (or just cut the best you can while still warm, my favorite way!!) |
