This is a family favorite and is great for using up old Bananas. I have altered the recipie a little to be a lot healthier and have fewer calories than the original recipie. Ingredients:
1 cup granulated sugar |
1 cup splenda no calorie |
1/2 cup shortening |
2 eggs |
1 1/2 cups all-purpose flour |
1 1/2 cups whole wheat flour |
1/8 tsp salt |
1 1/2 tsp baking soda |
1/2 cup skim milk |
3 med. bananas, mashed |
Directions:
1. Preheat oven to 350*F. Lightly spray two loaf pans with cooking or baking spray. 2. Cream together Sugar, Splenda and Shortening. Add in eggs one at a time. 3. Combine milk and bananas together and add to the sugar mixture. Mix well. 4. In a seperate bowl combine flours, salt and baking soda. 5. Slowly add the flour mixture to banana mixture until it becomes a thick batter consistancy. 6. Pour evenly into loaf pans. Bake for 40-50 minutes or until toothpick inserted in the center of the loaf comes out clean. 7. Let cool in the pan on a wire rack for 5 minutes before removing from pan. 8. To store left-overs, wrap in foil or place in air-tight container. |
