Homemade banana bread that can't be beat! Use I Can't Believe It's Not Butter Light, and Splenda Brown Sugar to lower fat and calorie content further.
Ingredients:
2 cups flour
1/2 cup brown sugar
1 tsp baking soda
1/4 tsp salt
1/2 cup egg beaters
4 ripe bananas
1/2 cup light margarine
Directions:
1. Mix together flour, salt and soda in small bowl.
2. Blend together margarine and brown sugar until creamy. Mix in eggs and bananas until well blended.
3. Stir flour mixture into moist ingredients until smooth.
4. Bake in greased and floured loaf pan at 350 for 1 hour.
