I always hated throwing out my too ripe to eat bananas so I decided to freeze them once and make my mother's banana bread. The added juice from the bananas makes for a very moist and flavorful bread. This is a definite family favorite. Ingredients:
1/2 cup low fat margarine |
1 egg |
1 cup sugar |
2 cups flour |
1 teaspoon baking soda |
1 teaspoon vanilla |
5 bananas, mashed |
1 cup chopped walnuts (optional) |
Directions:
1. Thaw bananas for 30 minute Mix margarine, egg vanilla and sugar in a bowl until well blended. Alternate adding bananas and flour (add baking soda to flour) and beat for 2-3 minutes. Pour into loaf pan and bake at 350° for 1 hour. |
