Delicious loaf of bread everyone will enjoy
Ingredients:
180 g butter or 180 g margarine
1 cup dark brown sugar
2 eggs
2 teaspoons vanilla extract
1/4 cup oil
3 -4 ripe bananas, mashed
3 cups flour
2 teaspoons mixed spice
4 teaspoons baking powder
1 teaspoon bicarbonate of soda
Directions:
1. Preheat oven to 170 deg Celsius
2. Grease a 27 x 14 x 8 cm deep loaf pan
3. Sift dry ingredients together
4. Using an electric mixer, beat butter & sugar until light - 3 mins
5. Add egg & vanilla essence, mix well
6. Add oil, mix well
7. Stir in banana
8. Add dry ingredients & mix on low speed of electric mixer until just combined.
9. Spread into greased pan
10. Bake for 1 hour.
11. Leave to cool in pan for 10 mins then turn onto a wire rack to cool.
12. Let go completely cold before cutting.
13. This makes quite a large loaf. For a smaller loaf, halve the ingredients and use a 23 x 14 cm loaf pan.
