I found this recipe on a bag of bananas that I purchased. I like it because with the changes that I made it makes a moist, flavorful loaf which is also low fat and lower in carbs. Ingredients:
1/2 cup unsweetened applesauce |
1/2 cup artificial sweetener (splenda) |
2 eggs |
1 cup flour (all purpose) |
1 teaspoon baking soda |
1 teaspoon salt |
1 cup whole wheat flour |
3 bananas, mashed |
1 teaspoon vanilla |
1/2 cup walnuts, coarsely chopped |
Directions:
1. Preheat oven 350 degrees, grease 9x5x3 bread pan. 2. Mix apple sauce and Splenda together. Add eggs one at a time, beating well after each addition. 3. Sift all purpose flour, baking soda & salt together , stir in whole wheat flour & add to apple sauce mixture, mixing well. 4. Fold in bananas, vanilla & walnuts. 5. Pour mixture into pan, bake 45 - 55 minutes or until toothpick comes out clean. Cool in pan 10 minutes, then on rack. Wrap in aluminum foil. |
