Took me a bit to get this recipe down but I have finally came up with the most delicious, moist banana bread!! You can also make zucchini bread by substituting the bananas for 5 cups shredded zucchini. I hope all who try this will enjoy it as much as i have. Ingredients:
3 1/2 cups all-purpose flour |
3 cups cake flour |
3 cups brown sugar |
2 cups granulated sugar |
2 1/2 teaspoons salt |
3 teaspoons baking soda |
2 teaspoons baking powder |
2 teaspoons cinnamon |
2 teaspoons vanilla |
4 eggs (large) |
1 1/3 cups water |
4 cups bananas, mashed |
2 cups vegetable oil |
Directions:
1. preheat oven to 350. 2. combine all ingredients in a large mixing bowl. 3. pour batter into 3 greased bread pans till 1/2 to 2/3 full. 4. bake for 1 hour and 30 minutes. check with a knife inserted into the center of loaf after 1 hour and 20 minutes for doneness. If knife comes out mostly clean, its done. 5. cool for 15 minutes before removing from pans. |
