I made this recipe from Joy of Cooking last night for DH's morning tea at work. His colleagues asked for the recipe, so thought I'd post it here. I didn't get to taste this myself, but I hear it was wonderful. Ingredients:
1 1/3 cups all-purpose flour |
3/4 teaspoon salt |
1/2 teaspoon baking soda |
1/4 teaspoon baking powder |
5 1/3 tablespoons unsalted butter |
2/3 cup sugar |
2 large eggs, lightly beaten |
1 cup mashed very ripe banana (about 2) |
1/2 cup walnuts or 1/2 cup pecans, coarsely chopped |
Directions:
1. Have all ingredients at room temperature. 2. Preheat oven to 180 degrees C, 350 degrees F. 3. Grease an 8 1/2 x 4 1/2 inch (6 cup) loaf pan. 4. Whisk the flour, salt, baking soda & baking powder together thoroughly. 5. In a large bowl, beat butter & sugar on high speed until lightened in colour and texture, 2-3 minutes. 6. Beat in the flour mixture until blended and the consistency of brown sugar. 7. Gradually beat in eggs. 8. Fold in bananas and nuts until just combined. 9. Scrape the batter into the pan and spread evenly. Bake until a toothpick inserted in the centre comes out clean, 50-60 minutes Let cool in the pan on a rack for 5-10 mins before unmoulding to cool completely on the rack. |
