Very light, fluffy banana bread. Ingredients:
2 eggs |
1 3/4 cups flour |
2 teaspoons baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
5 1/2 tablespoons butter, softened |
2/3 cup sugar |
3 very ripe bananas, mashed |
1 cup chopped pecans (optional) |
Directions:
1. Beat eggs in a small bowl. 2. Sift together flour, baking powder, baking soda and salt in a medium bowl. 3. Cream butter and sugar in a large bowl. Add eggs and beat well. 4. Gradualy add flour and bananas, alternating, untill fully incorporated. Stir in nuts. 5. Pour into a greased loaf pan and bake for 70 minutes or until toothpick inserted in the center comes out clean. |
