This banana bread came from my mother. Whether made as a loaf (her way) or into muffins (my way) it never lasted long enough to get cold. Ingredients:
1/2 cup oil |
2/3 cup white sugar |
2 eggs |
1 1/2 cups flour |
1/2 teaspoon baking soda |
pinch of salt |
3 bananas, mashed |
Directions:
1. Preheat the oven to 350 F. 2. Mix all the ingredients, in the order listed, in a large bowl - can be done by hand or using a mixer. 3. Pour batter into a greased loaf pan or muffin tins. 4. Bake for 1 hour (loaf) or until done (muffins). 5. Allow to cool 5 minutes before removing from pan/tins. |
