Whenever I have bananas that are too ripe to eat I freeze them in a ziplock bag. You need really ripe bananas for this recipe. Ingredients:
1/2 cup margarine, softened |
2 eggs, beaten |
1 1/2 tablespoons milk |
2 cups flour |
1/4 teaspoon salt |
1 cup sugar |
1 cup mashed banana (about 2) |
1 teaspoon lemon juice |
1 1/2 teaspoons baking powder |
1/2 teaspoon baking soda |
1 cup nuts (optional) |
Directions:
1. Mix all ingredients with a hand mixer. 2. Pour into 2 greased loaf pans. 3. Let sit at room temperature for 20 minutes and then bake for 1 hour at 350 degrees. |
