This recipe comes from an old cookbook called Foods of Old New England by Marjorie Mosser. Be careful measuring the salt and soda so as not to be too salty in taste. It yields a delicious moist loaf. Ingredients:
3 bananas (super ripe with black spots!) |
1 cup sugar |
1/4 cup butter, melted |
1 teaspoon baking soda |
1/2 teaspoon salt |
2 eggs, beaten |
1 1/2 cups all-purpose flour |
Directions:
1. Preheat oven to 350F and lightly butter a loaf pan. 2. Put the bananas in a food processor; add the remaining ingredients. 3. Turn into prepared pan and bake for one hour or until bread tests done. |
