This is based on JoAnna Lund's Best Banana Bread recipe from her cookbook 'Cooking Healthy with Splenda'. Ingredients:
3/4 cup splenda granular |
1/3 cup unsalted butter |
2 eggs |
1 cup banana, the riper the better, and mashed |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
Directions:
1. Preheat oven to 325 degrees Fahrenheit. 2. Spray a 9-by-5-inch glass loaf pan with butter-flavored cooking spray. 3. In a large bowl, combine Splenda sugar, unsalted butter, and eggs. 4. Mix well using a wire whisk. 5. Stir in mashed bananas. 6. Add flour, baking power, and baking soda. 7. Mix gently using a sturdy spoon. 8. Evenly spread batter into prepared loaf pan. 9. Bake for 45 to 50 minutes or until a toothpick inserted in center comes out clean. 10. Place loaf pan on a wire rack and let set for 10 minutes. 11. Remove banana bread from pan and continue cooling on wire rack. 12. Cut into 8 slices. |
