Banana Bran Pancakes (Diabetic)

These are a perfect Sunday morning breakfast with sugar free maple syrup. You may need to adjust the amount of flour slightly depending an the amount of moisture in the bananas. Yield depends on how big you make the cakes. Baking time also depends on the size of the cakes.
Ingredients:
1 1/3 cups skim milk
1/2 cup egg beaters egg substitute
1 tablespoon vegetable oil
1 teaspoon vanilla
3/4 cup banana, ripe
1 1/2 cups multi-bran chex
1 cup all-purpose flour
3 tablespoons splenda sugar substitute
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
Directions:
1. In blender, process milk, eggs, oil, vanilla, and banana just to mix.
2. Add bran cereal, process, add remaining ingredients.
3. Process to combine, scrape sides of container.
4. Let stand 5 minutes.
5. Stir.
6. Bake on preheated, lightly greased griddle over medium heat.
7. Pour batter to form pancakes, cook.
