Muffins I made up this morning to use up some over-ripe bananas. Pretty healthy and quick too. Ingredients:
1 cup whole wheat flour |
3/4 cup white sugar |
1/4 cup rice milk |
1 teaspoon vanilla extract |
2 1/2 very ripe bananas, mashed |
1 egg |
1/2 cup quick oats |
1/2 cup unprocessed wheat bran |
Directions:
1. Preheat oven to 350°F. 2. Mix wet and dry ingredients separately, and then combine. 3. Pour into greased muffin tins (makes 6). 4. Bake for 30 minutes at 350°F. |
