Yet another magazine find, I liked these because they weren't too sweet. Great breakfast snack, quick and easy too. Makes 9 large muffins or 12 regular size. Ingredients:
1/2 cup white sugar |
1 cup natural bran |
1 cup plain flour |
4 teaspoons baking powder |
2 eggs |
100 g butter, melted |
2 bananas, mashed |
1/4 cup milk |
Directions:
1. Preheat oven to 200 degrees C. 2. Mix all dry ingredients in a bowl. 3. In a second bowl, beat eggs, melted butter& milk together with the bananas. 4. Add dry ingredients and mix together to just combine. 5. Do not overmix. 6. Spoon into well-greased muffin tins and bake 10-15 minutes. |
