I like bran muffins but the addition of bananas make these muffins so good and moist Ingredients:
2 eggs |
11/2c brown sugar |
1c vegetable oil |
2c mashed ripe bananas |
2tsp vanilla |
2c all purpose flour |
2c natural bran |
1tsp baking soda |
2tsp baking powder |
1tsp salt |
1tsp cinnamon |
Directions:
1. Beat eggs and sugar until smooth. Add banana's, oil and vanilla. 2. Let stand 5 mins. 3. Combine dry ingredients and add to egg mixture. Mix until just blended. Spoon into lined muffin cups. 4. Bake at 350F 20-25mins. |
