Banana/Blueberry Pancakes |

After finding the reduced priced bananas in produce and using half for muffins I sought out a recipe for the remainder...not finding exactly what I was looking for...something not to thick, not to thin, but just right and nice to the waist-line... I got creative, this is the result. Ingredients:
4 bananas, small & mashed |
2 1/2 cups low-fat biscuit mix |
1/4 cup flax seed, milled |
1 large egg |
1 large egg white |
2 1/4 cups skim milk |
2 teaspoons cinnamon, ground |
1 teaspoon pumpkin spice |
1 cup blueberries, frozen |
Directions:
1. Mix all ingredients except blueberries. 2. Fold in blueberries (I mixed mine in while still frozen). 3. Heat skillet on medium heat. 4. Pour batter to create 3 dia pancakes. |
