Ingredients:
1 cup frozen blueberries |
2 tablespoons all-purpose flour |
2 1/4 cups all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon ground cinnamon |
1/4 teaspoon salt |
1 cup mashed ripe banana |
2 large eggs |
3/4 cup light brown sugar |
1/3 cup butter, melted |
1/2 teaspoon vanilla extract |
Directions:
1. Toss blueberries with 2 Tbsp. all-purpose flour. Stir together 2 1/4 cups all-purpose flour, baking powder, cinnamon, and salt. Whisk together banana, eggs, brown sugar, melted butter, and vanilla; add to dry ingredients, stirring just until moistened. Fold in blueberries. Spoon into a lightly greased 12-cup muffin pan, filling two-thirds full. Bake at 375° for 20 minutes or until golden brown. |
