My dad absolutely loves this creation. I'm just grateful that he doesn't ask for raisins in it too.
Ingredients:
1/2 cup butter
1 cup sugar
2 eggs
1 cup mashed bananas
1 cup blueberries (fresh or frozen)
1 1/2 cup flour
1 tsp vanilla
1 tsp baking soda
1/4 tsp salt
1/2 cup oatmeal
Directions:
1. Preheat the oven to 325 degrees F.
2. Cream the sugar and butter together until smooth.
3. Add the eggs and vanilla, and mix until blended.
4. Add the bananas and blueberries to the mixture and fold in.
5. Sift the baking soda into the flour and gradually add the dry mixture.
6. Mix the salt into the oatmeal and gradually add until mixture is completely blended.
7. Grease a loaf pan and lightly flour the bottom and sides.
8. Bake loaf for 50 minutes.
