A dense breakfast bread that is very satisfying. Whole wheat flour can be substituted for a lighter bread. Ingredients:
2 cups rye flour |
1 banana |
1/2 cup applesauce |
1 pint blueberries |
1 egg |
1/2 cup sugar |
1 1/2 tablespoons butter |
1/3 cup flax seed |
1 teaspoon baking soda |
1/2 teaspoon baking powder |
Directions:
1. Mix bananas and soda together and set aside. 2. Cream butter and sugar. Add egg and applesauce and mix well. 3. Sift together flour, flax seed and baking powder. 4. Combine banana mixture with butter mixture. Slowly mix in flour. 5. Pour into a well-greased loaf pan and bake at 325 for at least 1 hour and fifteen minutes. |
