Banana Berry Mega Muffins |

These giant muffins are dense and full of fruit, but no processed sugars. A natural, filling breakfast treat. Ingredients:
2 1/2 cups flour(whole wheat is okay |
1 cup oats |
1t baking soda |
1t baking powder |
1/4t fresh nutmeg, grated |
1/2t fine kosher or sea salt |
3 very ripe bananas, mashed |
2 eggs |
1/2stick butter, softened |
1/2 cup honey |
1/2 cup fresh(not frozen) orange juice |
1t vanilla |
1/3 cup buttermilk |
1 1/2 cups fresh berries(blueberries can be whole, but slice larger berries a bit) |
raw sugar for tops, optional |
Directions:
1. Combine flour, oats, soda, powder, nutmeg and salt and set aside. 2. In bowl of electric mixer, add bananas, butter and honey and mix well to mash bananas and combine ingredients. 3. Add orange juice and vanilla and mix. 4. Add eggs, one at a time, beating well after each. 5. Add buttermilk, then dry ingredients, mixing until just combined. 6. Don't over mix. 7. Fold in berries. 8. Spoon into papered or well greased giant or regular muffin tins 9. Sprinkle tops with raw sugar, if desired 10. Bake at 350 for 20-22 minutes, until tops are golden brown and a toothpick comes out JUST clean. Do not over bake. 11. Let cool a couple minutes in the tins, then remove to cooling rack. |
