Ingredients:
2 tbsp margarine
1 cup skim milk
2 eggs
1 cup (2-3) mashed bananas
1 tsp vanilla essence
1 tsp baking soda
1/2 tsp salt
100 g (1/2 cup) wholemeal flour
257 g cannellini beans (1x 415g can, drained)
1/2 cup walnuts, chopped
Directions:
1. Mash bananas.
2. Puree beans with milk.
3. Mix bananas, puree, melted margarine and other ingredients.
4. Add chopped nuts.
5. Bake in grease and lined loaf tin at 175 degrees Celsius for 45-50min.
