Ingredients:
1 small ripe banana, mashed
1/4 cup shortening
1 egg
1 cup all-purpose flour
3/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1/4 cup milk
1/3 cup chopped pecans
lemon frosting
Directions:
1. Combine banana and shortening in a medium mixing bowl; beat at high speed of an electric mixer 2 minutes. Add egg, and beat 1 minute.
2. Sift together flour, sugar, baking powder, soda, salt, and spices in a small mixing bowl; add to banana mixture, stirring well. Stir in milk and pecans.
3. Pour batter into a lightly greased 13- x 9- x 2-inch baking pan; bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Spread with Lemon Frosting while warm; cool completely. Cut into 2- x 1 1/2-inch bars to serve.
