Another way to use up those over-ripe bananas. Sometimes I also add chocolate chips to the banana mixture or a little bit of cocoa to the frosting mixture, for a different taste. Ingredients:
1 cup ripe banana, mashed |
1 cup sugar |
2 cups all-purpose flour |
8 ounces light sour cream |
1/4 cup butter, melted |
2 teaspoons vanilla |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
2 eggs |
frosting |
8 ounces light cream cheese, softened |
1/4 cup butter, softened |
1 teaspoon vanilla |
2 cups confectioners' sugar |
Directions:
1. Preheat oven to 350F. 2. Cream butter and sugar together. 3. Add sour cream, eggs, banana,and vanilla and mix well. 4. Slowly add flour, baking powder and baking soda and continue mixing. 5. Pour into a greased 13 x 9 inch baking pan. 6. Bake for 25 minutes. 7. Cool before frosting. 8. Combine all frosting ingredients in a bowl and beat with a hand mixer until desired consistency is reached. 9. You may need to add more confectioner's sugar. 10. Frost and slice into bars, refridgerating any uneaten portions. 11. Enjoy! |
