I developed this recipe because I love homemade banana bread but wanted a recipe that didn't include oil or butter. This recipe allows me to enjoy the flavor without all the fat. Ingredients:
1 1/2 cups all-purpose flour |
1 teaspoon baking soda |
1/2 teaspoon salt |
1/2 cup white sugar |
1/2 cup brown sugar |
2 eggs, beaten |
1/4 cup applesauce |
3 bananas, mashed |
Directions:
1. Grease and flour 4 mini loaf pans. Preheat oven to 350°F (175°C). 2. In one bowl, whisk together flour, soda, salt, and sugar. Mix in slightly beaten eggs, applesauce, and mashed bananas. Pour into prepared pans. 3. Bake at 350°F (175°C) for 40 minutes, or until a wooden toothpick inserted in the center comes out clean. |
