A healthy, low fat, tasty banana apple muffin recipe for breakfast or a snack. 205 calories per muffin. Ingredients:
1/2 cup wheat germ |
2 cups whole wheat flour, sifted |
1 tsp baking soda |
2 tbsp baking powder |
1/4 tsp salt |
1/2 cup pecan pieces |
1 tsp cinnamon powder |
1/4 cup ground flax seeds |
1/2 cup sugar (natural cane sugar is better) |
2 cups bananas, mashed or 3 medium size bananas |
3 medium size eggs |
1 tsp pure vanilla extract |
1/2 cup apple sauce (no sugar added) |
Directions:
1. Preheat oven to 350 degrees F. Grease muffin pan and line with paper liners. In large bowl, combine all the dry ingredients except the pecan pieces. In a large separate bowl combine all the wet ingredients. Blend well. Slowly combine the dry ingredients to the wet ingredients a little at a time, blending well between additions. When both have been mixed, add the pecan pieces and mix into the batter. 2. Scoop batter into muffin cups. Bake 25-30 minutes or until a toothpick inserted in the muffin comes out clean.
