Balsamic Vinegar Glazed Vegetables |

An easy way to prepare vegetables Ingredients:
2 tbls. olive oil |
1 red bell pepper, cut into 1/4 inch strips |
1 yellow bell pepper, cut into 1/4 inch strips |
1 onion, sliced thinly |
2 zucchini, cut into 1/2 inch thick disks |
2 yellow summer squash, cut into 1/2 inch disks |
2 tbls. balsamic vinegar |
salt and pepper to taste |
Directions:
1. Heat oil in large skillet to medium high 2. Add peppers and onion and saute until tender 3. Add zucchini and squash and saute until tender, about 8 minutes 4. Add vinegar and boil until liquid is reduced to glaze and coats all vegetables 5. Salt and pepper |
