Balsamic Vinegar Glazed Vegetables

An easy way to prepare vegetables
Ingredients:
2 tbls. olive oil
1 red bell pepper, cut into 1/4 inch strips
1 yellow bell pepper, cut into 1/4 inch strips
1 onion, sliced thinly
2 zucchini, cut into 1/2 inch thick disks
2 yellow summer squash, cut into 1/2 inch disks
2 tbls. balsamic vinegar
salt and pepper to taste
Directions:
1. Heat oil in large skillet to medium high
2. Add peppers and onion and saute until tender
3. Add zucchini and squash and saute until tender, about 8 minutes
4. Add vinegar and boil until liquid is reduced to glaze and coats all vegetables
5. Salt and pepper
