Our favorite Dressing for Fresh Tomatoes with a little Feta Cheese. From a 1980's Martha Stewart Quick Cook cookbook. Ingredients:
1/3 cup balsamic vinegar |
2 tablespoons dijon mustard |
3/4 cup olive oil |
1/2 teaspoon salt |
fresh ground black pepper |
Directions:
1. Warm vinegar over low heat in a small saucepan. 2. In a large mixing bowl combine the warm vinegar and mustard. Slowly whisk in the olive oil until the mixture becomes thick and creamy. Season with salt and pepper. Pour the dressing over the tomatoes and serve. |
