My family's favorite salad dressing. Change the flavor with different vinegars, and experiment with various herbs. I use greek oregano. Ingredients:
3 tbsp. balsamic vinegar |
2 tbsp. fresh lemon juice |
2 tbsp. dijon mustard |
2 cloves garlic, crushed |
1/2 c. olive oil |
honey, to taste |
salt and pepper |
Directions:
1. Whisk all ingredients together, seasoning as necessary. 2. Serve over a salad of mixed greens, sliced red onions, julienned red peppers, cucumbers, halved and seasoned cherry tomatoes, toasted pine nuts and feta cheese. |
